Beef Rendang Garlic Roti
This viral tik tok hack puts dinner on the table in 25 minutes! Have you seen the burger/ taco craze?? This easy & fun twist combines the warming flavours of rendang paste, garlic roti with mint yoghurt, fresh cucumber, crunchy lettuce & mango chutney. Its sure to be a family favourite.

Ingredients
For the garlic roti
500g beef mince
2 tbsp rendang paste
2 tsp garlic powder/ granules
4-6 garlic roti
Spray oil
For serving
1/3 iceberg lettuce, shredded
1 Lebanese cucumber, sliced
Fresh coriander
3/4 cup natural yoghurt/ or coconut yoghurt
2 tbsp fresh mint, chopped
Instructions
In a bowl combine beef mince, rendang paste, garlic & 1tsp each of salt & pepper. With you hands or a spoon mix together to combine evenly.
Prepare the lettuce, cucumber & coriander.
In a small bowl mix together the yoghurt & fresh mint.
Take a garlic roti & press a thin layer of beef onto the roti. Have them all ready before you begin cooking.
Preheat a hot skillet or fry pan over high heat. It should be smoking.
Add a bit of spray oil to the pan and place one roti with the beef side down. Flatten/smash it using a flat surface, using the bottom of a saucepan or your hand. Leave it there for 1-2 minutes then lightly spay the top side with a little oil and then flip.
Cook for a further 1-2 minutes to crisp up the roti.
Remove it from the pan and repeat with all the roti. To keep them warm, place in a preheated oven at 130c/ 110c fan on a cooling rack so that they don't go soggy.
Serve with the lettuce, cucumber, coriander, mint yoghurt & mango chutney.
Hints & tips
Make gluten free - Swap the roti for a gluten free garlic/ or plain wrap. These are our favorites Old El Paso & El Cielo
Mince - Beef mince is used for the classic beef rendang flavours. Lamb mince would be a good alternative.
Easy swaps - Roti can be swapped for tortillas if that’s what you have on hand.
Add or swap out any salad you like:
Iceberg lettuce is the classic choice, but other lettuces and leaves can be used, too. Spinach, kale, and rocket will all yield different results in taste.
Add more vegetables. If you want a fresher flavour, you can add chopped tomatoes, red onion or avocado.

Storage - These are best cooked fresh. Cook what you will eat and store the leftover raw mince in the fridge for 3 days. Use to cook up another quick dinner or lunch.
