Adobo Roast Chicken
Mexican adobo is one of a number traditional Mexican rubs and sauces that are made from a base of dried, ground chili peppers along with different proportions of spices and fresh aromatics. The Spice People Adobo blend is used to make the perfect marinade for roasting chicken, especially when butterflied to cut down the roasting time!! Make this a one pot meal by using your favourite seasonal veg and roasting the chicken over the top.

Ingredients
1.8kg Chicken
2 Tbsp The Spice People Adobo seasoning
3 Tbsp Olive oil
1 Lemon - juice & zest
Salt to season
Method
Preheat oven to 180c fan/ 200c.
Prep the chicken by removing any innards and excess fat. Take strong kitchen scissors and cut either side of the backbone starting at the tail. Remove the backbone then flatten by snapping the breastbone with the heel of your palm. See notes for pictures of how to do this.
In a small bowl, combine marinade ingredients. Generously brush inside of chicken. Place chicken skin side up on a deep baking tray, tucking the wing tips. Finish by brushing skin side generously with remaining marinade.
Roast for 60 minutes or until the juices run clear. If you have a meat thermometer you can check by inserting at the thickest point and it should read around 70-80c.
Hints & tips
Larger chickens will need longer in the oven, add an extra 10 minutes per 200g.
Orange or limes will work just as well if you don’t have a lemon.
