Peanut Teriyaki Pork Noodles

Dinner cooked in 30 minutes! Satisfy your takeaway cravings with this quick & easy peanut teriyaki pork noodles that the whole family will devour in minutes.

Ingredients

  • 500g pork mince

  • 1 tbsp sesame oil

  • 2 garlic cloves, minced

  • 4 spring onion, diced

  • 500g egg noodles - see hints & tips for GF

  • 1 cup chopped broccoli

  • 1 cup chopped green beans

  • 3 tbsp smooth peanut butter

  • 3/4 cup teriyaki sauce - Jimoto

  • 2 tsp sesame oil

  • 1/4 cup chopped peanuts to serve

  • Extra chopped spring onion to garnish

  • Optional - The Larder crispy chilli oil

Instructions

  1. Heat a large fry pan with 1 tbsp of sesame oil, add the pork mince, spring onion & garlic, fry until cooked and the mince has browned a little.

  2. Toss in the chopped broccoli & green beans, cook for a further 5 mins stirring the veggies through the mince.

  3. While that is cooking, in a bowl whisk together the teriyaki sauce, peanut butter and the extra 2 tsp of sesame oil.

  4. Bring a large pot of salted water to the boil. Add the noodles and cook according to package instructions until cooked. Drain saving a little of the noodle water for later.

  5. Pour the sauce over the mince and stir to combine. Heat through for a minute or two.

  6. Add the hot noodles and a few tablespoons of the reserved water to help coat evenly, toss the pork mince through the noodles. Season to taste.

  7. Serve the noodles garnished with chopped peanuts, spring onion and crispy chilli oil/ sesame seeds - optional.

Hints & tips

Make it Gluten free - To make this dish gluten free swap the egg noodles for rice/ gluten free spaghetti of choice.

Pork mince - This recipe uses pork mince. Easy meat swaps, beef or chicken mince would both work really well in this recipe.

Noodles - I used egg noodles/stir fry noodles but any noodles will work. Rice noodles, soba noodles, instant ramen noodles and even spaghetti will work well.

Veggies - Use any green veggies you have on hand for this dish.

Serving suggestion - Serve as a stand alone meal or for something different, serve the noodles in lettuce cups!

Portion size - This dish will serve 4 or 2 with leftovers.

Storage - Store in the fridge for 3 days. Not suitable for freezing.
